Here's how I made my camera mount
I used 3/8" (iirc) U-bolts to hold the PVC to the headrests
Then I attached a 1/4" bolt like so
and attach to headrests!
Here's a picture I took at 1/10th of a second
and a test video with a really crappy PnS camera. The memory card and battery ran out so this is the only usable film lol.

PVC is probably fine for a PNS, but probably not fine for a DSLR.

If I was using a DSLR for video, it would be very bouncy. Taking a pic with my Canon on smooth pavement works fine, as seen in the picture there. But with PnS's or a small video camera it will hold up well.
and Dani, this is the final version, it works pretty good

to improve stability and weight load, but that is one fixed camera view, is that what you wanted? i thought you said you wanted it to swivel

There's no need for it to swivel, it is pointed where I want it, so I will leave it there

I'm still trying to figure out where to mount my new video camera... it's not quite as nice as your cameras but it was $20 shipped and doesn't look anything like I'm videographing myself racer-driving

What camera is it?
This mount is VERY easy to make, it took me about 40 minutes, including the trip to Home Depot

My camera is the size of a key fob, to mount it facing out of my windshield I have to tape it to something

Made this badboy today! It's VERY sturdy and seems to work well. I made it in hope to use it at Cedar Point tomorrow, but I decided not to bring the GoPro. Next step, make a rig for it.
